There are some packages on bbn-hn that include software that listens on the network, for which SRPMs don't seem to be available.

I've confirmed that SRPMs for FlowVisor? is at http://software.exogeni.net/repo/exogeni/6/current/SRPMS/.
There's a file SRPM_UNAVAILABLE_FOR_ORACLE_JDK explaining why there's no SRPM for JDK, so that's all set.
I'm not sure about these three:
openstack-nova-api.noarch 1:2011.3-b1281neuca2 @exogeni-noarch openstack-nova-objectstore.noarch 1:2011.3-b1281neuca2 @exogeni-noarch openstack-glance.noarch 1:2011.3-b1277 @ExoGENI-noarch/6.2
I see openstack-nova-2012.1.1-exogeni6.el6.src.rpm; does that correspond to one of those three? If so, which one, and what about the other two?

Erm. Where are you finding those versions? That looks like yum output - and it looks dated.
To partially answer your question: 1) openstack-nova-api and openstack-nova-objectstore are built from: openstack-nova-2012.1.1-exogeni6.el6.src.rpm
which is a slightly patched version of what's included in the RHOS preview.
2) openstack-glance should *now* be coming from from a repo named "openstack-noarch" - which, while hosted at RENCI, is nothing more than the "stock" RHOS preview RPMs.

So, indeed, this is a survey from EG-MON-1 Step 1 (http://groups.geni.net/geni/wiki/GENIRacksHome/ExogeniRacks/AcceptanceTestStatus/EG-MON-1#Step1:identifynetwork-listeningsoftwareontheheadnode), which I did back in August. I should perhaps re-run it now after the OpenStack? upgrade and see what's what.

As noted, I couldn't find SRPMs for these:
- MegaRAID_Storage_Manager-11.08.03-03.src.rpm -- where is this from?
- openstack-keystone-2012.1.2-4.el6.src.rpm -- this seems like it should be in the ExoGENI SRPM repo, but isn't.
- jdk-1.6.0_30-fcs.src.rpm -- that's ok, though, there's a README file in the ExoGENI SRPM repo explaining why not.
- xCAT-server-2.6.9-snap201111090305.src.rpm -- http://xcat.sourceforge.net/yum/2.6/core-snap-srpms has xCAT-rmc-2.6.9-snap201110210637.src.rpm, but that's a different file.
